Mango-Chicken
Mango-Chicken Ingredients 3 boneless skinless chicken breasts salt freshly ground black pepper 2 Tbs olive oil 1 red onion, sliced 12 red bell peppers, sliced 2 tbs ginger, minced 2 mangoes, peeled and cut into ¾ inch cubes 2 medium zucchini, sliced and half-mooned ½ c apple juice 2 Tbs apple cider vinegar ¼ c sugar 1 Tbs curry powder ½ teas fresh hot red pepper,minced or ¼ tsp hot red pepper flakes Slice the chicken on an angle into ½ inch slices. Season with salt and pepper. Heat the oil in a large fry pan over medium-high heat. Add half of the chicken pieces and cook, flipping once, until lightly browned on each side. Transfer chicken to a plate. Repeat with remaining chicken. Turn stove down to medium heat and add onions and peppers. Saute` until onions begin to glisten then add ginger. Saute` just until fragrant, about 30 seconds. Add mangoes, zucchini, apple juice, vinegar, sugar, curry powder, red pepper flakes and 1;/4 teas salt. Simmer covered about 5 minutes until zucchini are slightly cooked. Add chicken and cook uncovered for an additional 5 minutes. Taste and add salt if necessary. Serve over cooked brown or white rice.
